Quick Candied Yams
By aslaught
I found a can of yams on my cupboard shelf that had been there since Thanksgiving. I found this recipe on the side of the can and made this dish for dinner tonight. My family loved it.
My husband is diabetic so I used Splenda instead of sugar, and sugar free brown sugar.
The sauce was a tiny bit runny, and I believe this was due to not using regular sugar. The Splenda doesn't boil down like regular sugar, but this dish was still very tasty.
1 40 oz can Bruce's Cut Yams
1/2 cp butter
2/3 cup white or brown sugar. Please note: I used 2/3 cup of Splenda, and about a tbsp of sugar free brown sugar.
2/3 cup syrup from can.
Place yams in shallow baking dish. Combine syrup from can, sugar and butter in saucepan, stirring to boil to thicken. Pour sauce over Yams. Bake in 350 degree over for 20 to 30 minutes, basting frequently.
Vary the above recipe with these taste-tempting garnishes. Sprinkle lightly with ground cinnamon and/or nutmeg. Place a few slices of orange or pineapple on Yams in dish and 3 Tbsp. ornage or pineapple juice to liquid before basting.
I sprinkled a bit of cinnamon over my Yams while they were in the oven.
We all loved it as a hot, tasty, and nutritous side dish. Yes, yams are nutritous.
