Easy, Quick, and Tasty Potato Soup

How To Make Potato Soup
As a working woman I was always searching for a quick and healthy meal for my family. This potato soup recipe is so good, and really, "sticks to the ribs."
What you will need.
Approx 6 potatoes. I prefer red, but white will be fine.
Tbsp butter or margarine.
1/2 cup onion.'
1/2 cup milk. Plus 1/3 cup set aside.
Approx Tbsp. flour.
Salt and pepper.
For variation: Carrots, celery.
Peel the potatoes and cut into about 2" cubes. Fill a pot with 6 cups of water. Bring to a boil
Add potatoes, onion, and 1/4 cup milk and butter, salt and pepper into boiling water and and lower heat to simmer.
Cook until potatoes are tender.
Remove from heat, mix Tbsp flour and 1/3 cup milk to make a paste. You may need to experiment with amount of milk and flour, but it should resemble paste. Allow soup to cool down, and add flour and milk paste. Stir rapidly, as this mixture will lump. This is to thicken the soup.
Salt and pepper to taste. I have found that potatos soak up the salt.
